White or dark, sweet or bitter…..chocolate is always an art!  From Alain Ducasse’s famous chocolate tart, to his milkshakes, and petits fours, this is session is about cacao in all its forms and all its states, for the ultimate chocolate lover.

Full day sessions: Friday, October 24th – Wednesday, December 3rd

Half day sessions: Tuesday afternoon, September 23rd – Tuesday afternoon, December 2rd

The essentials

Come discover all the fundamentals of pastry making: dough, biscuits, thin crispy shortbread, mousses, sauces….in all different savors and flavors, both classic and unusual. 
Through this session you will be introduced to the basic techniques of pastry-making inspired by Alain Ducasse, a perfect introduction to our other sweet sessions.

Full day sessions: Wednesday, September 24th – Friday, November 7th

Half day sessions: Tuesday afternoon, September 9th – Tuesday afternoon, October 28th

Macarons and ohter mini delicacies (Mignardises)

The pleasure of miniatures!  From macaroon in all its forms to sweet petits fours, learn the delicate preparation of a menu made of small delicacies!

Full day sessions: Wednesday, September 10th – Friday, October 31st – Friday, November 28th

Half day sessions: Tuesday afternoon, October 14th – Tuesday afternoon, November 18th – Tuesday afternoon, December 16th
